Organic Sunrise Red Lentils, $6.00/lb - Timeless

Cultivation of lentils (Lens culinaris) dates to the first eight "Founder Crops" domesticated in the Fertile Crescent about 10,000 years ago. As lentils were farmed, they were grouped into two seed sizes: small seeds measuring 3-5 millimeters and large seeds of 5-7 millimeters in size. Sunrise Red Lentils are larger seeds.

Historically lentils were so important that the Romans named their emperors after the most common legumes: Lentilus (lentil), Fabius (fava), Piso (pea), and Cicero (chickpea).

Decorticated (having had the skins removed) lentils cook very quickly and are perfect for dal, lentil hummus, thick lentils soup, or as an ingredient in all sorts of crackers, cookies, cakes, and other desserts.
