With a toasty, tropical flavor, our Single Origin Powdered Coconut Sugar is made from the sweet nectar of the coconut palm, grown by smallholder farms on the island of Java. Use in place of powdered cane or palm sugar for baking or in savory Southeast Asian dishes for a warm and complex sweetness.

Farmers scale the trees twice per day to swap out the bamboo tubes they use to collect the nectar, which drips from the trees’ clusters of green flowers. The nectar is boiled by the farmers themselves until it turns dark, sticky and very sweet, and then it is cooled into cakes that are crushed by hand using coconut shells before it is finely ground into a powder.
