Blended from 60% Sonora heirloom white wheat and 38% hard red winter wheat flour, along with 2% “Capay Rye” malt from our friends at Admiral Maltings.

Sonora brings lightness for a wholegrain flour, the hard red wheat lends strength and depth of flavor, and the malted rye promotes lively fermentation and dark, crispy crusts.

Red Bug (named for our indefatigable 66 year old Allis Chalmers SP100 combine) is a flavorful, high performance whole grain flour blended to create exceptional sourdoughs.
