Blended from 60% Sonora heirloom white wheat and 38% hard red winter wheat flour, along with 2% “Capay Rye” malt from our friends at Admiral Maltings.
Sonora brings lightness for a wholegrain flour, the hard red wheat lends strength and depth of flavor, and the malted rye promotes lively fermentation and dark, crispy crusts.
